Ingredients

  • 1 Shallot – minced
  • 1-inch ginger – finely minced

  • 4 cups water
  • 4-56 cremini mushrooms
  • ½ cube vegetable broth
  • 3 shiitakes – fresh or rehydrated
  • 1 garlic clove minced 
  • 2 tablespoons white miso 
  • 1 tablespoon soy sauce
  • 2 tablespoon Gochujang 
  • 2 tablespoon sugar
  • ¼ teaspoon salt to taste
  • 5 ounces of dry long noodles
  • 1 piece pak choy 
  • 5 ounces of fried tofu, seitan 
  • Chopped green onions ( optional)
  • 5 ounces of long dry noodles
  • 1 teaspoon sesame seeds 

Instructions

  • In a large saucepan, heat oil over medium flame. Once hot, saute garlic, shallots, and ginger for over two to three minutes. 
  • Next, add your mushrooms, both cremini and shiitakes. Saute them for two more minutes. Add water, vegetable broth cube, white miso, soy sauce, Gochujang, and sugar. You can also make your own vegetable broth at home using a variety of spices for ramen and other additional ingredients.
  • At this time, you may also add the fried tofu. 
  • Bring the material to a boil. Rescue the heat to simmer and let it cook for at least ten to twelve minutes. 
  • In the meantime, saute the green vegetables in a different pan and cook the noodles as instructed on the packaging. 
  • Taste the broth and adjust the seasoning and salt as needed. The broth has to be salty and sweet, so feel free to add more salt as required. In case, there is extra salt, you can dilute it by adding some more water.
